Lemon Baked Salmon and Potatoes

For all you first thyme chefs, this is no difficult meal! It takes three ingredients and about 30 minutes to prep and bake.


Ingredients (Salmon):

1 lb Atlantic Salmon filet

1 lemon, sliced

Fresh Dill


Ingredients (Potatoes):

3 red potatoes, sliced

1 tbsp Italian Seasonings

Basil

Olive oil, drizzled

salt and pepper


This is one of my favorite meals because it's so easy to prepare and it looks beautiful when serving!


To prepare, preheat oven to 425 degrees and place salmon in an oven safe pan or dish. Place lemon slices on top your salmon so that they overlap slightly. Then, take your fresh dill and pull the leaves off and place over top.


Put as much dill on as you would like. Personally, I love dill, so I tend to put a lot on!


While the oven was preheating, I prepared the potatoes. I took a mandolin and sliced the potatoes very thin. I then layered them on a cookie sheet, drizzled with olive oil, sprinkled with fresh basil, Italian seasonings and salt and pepper.


I put both in the oven and cooked at the same heat for the same time.


This would be a delicious dish for a date night at home, or even for a white wine night with yourself!
